In dairy farming, a milk cooling tank is a large storage tank for cooling and holding milk at a cold temperature until it can be picked up by a Milkman or a milk truck. The milk cooling tank is an important piece of dairy farm equipment. It is usually made of stainless steel and used every day to store the raw milk on the farm in good condition. It must be cleaned after each milk collection. The milk cooling tank can be the property of the farmer or be rented from a dairy plant.

Milk must be cooled from 98 degrees F. (37 degrees C.) to storage temperature, typically about 38 degrees F., to preserve its quality. The cooling process involves removing 56 BTUs of energy from each pound of milk (27 kilojoules per kg). Typically, a refrigeration system does this by using a special refrigerant fluid to remove heat from the milk and “reject” the heat into the outside air.

It is also important to keep a farm’s Cooling system clean and well maintained. Dirty coils or low refrigerant pressures will reduce efficiency and increase operating costs. Many systems have a “watch glass” that can be used to determine if the refrigerant needs to be recharged.

Importance of cooling milk

The best alternative to the present collection system of milk is cooling milk immediately after milking by Cooling Tanks.

The usage of such tanks has become popular in the recent past because it not only helps in increasing the shelf-life of milk but also provides a systematic and simple way of procurement of milk. It also ensures procurement of more milk by covering untapped farther areas for milk collection.

If the milk is not processed within two hours of milking, it is required to be cooled to a temperature below 7oC. Therefore, the dairies that have to market their milk and milk products in the international market will have to comply with the Codex International Code of Hygienic Practice and cold chain will become a must for them.

The initial capital investment will pay back in the long run, as the system will eliminate the use of milk cans, milk sourage, reduction in transportation cost, better return, etc.

The normal capacity of Milk Cooling tanks varies from 500 liters of milk per day to 5000 liters of milk per day. However, Milk Cooling tanks of bigger capacities are also available on demand.

The Milk Coolers are installed in the vicinity of the farmers so that milk is chilled as soon as it comes out of the animal’s udder. The main advantages of Milk Coolers are as follows:

■ Elimination of souring/ curdling of milk because of cooling at the collection center itself

■ Adulteration of milk and spillage from cans can be eliminated during transport

■ Transportation cost of milk can be brought down by regulating transportation to the main dairy either on alternative days or once a day

■ Saving of initial investment on the purchase of cans and subsequent maintenance cost (Repairs, cleaning, etc) of those cans

■ Improved quality of milk can be supplied to the main dairy to manufacture quality products for domestic as well as export markets

■ Flexibility in milk collection time increases in the volume of milk collected at the centers

■ Farmers will get better ret-urns for the quality of milk

■ Chilling at the main dairy can be avoided

One of the most important things to buy for successful dairy production is not only a cheese kettle but also a milk cooling device. Milk coolers are one of the most important things to ensure the constant quality of your dairy products.

Cooling milk immediately after milking keeps bacteria from multiplying rapidly. Holding milk at temperatures below 4 °C and above freezing maintains its excellent quality until it is processed for milk or manufactured into dairy products. Each degree in temperature above 4 °C elevates bacteria counts and decreases the shelf life of finished products. Close temperature control and clean milk are necessary to produce high-quality dairy products. Bacteria use milk sugar, fat, and other compounds of milk.

It is not recommended to process milk directly after milking. Milk cooling is especially important when there are considerable time lapses between milking and pasteurization or processing.

Milk cooling is even more important if you are processing raw milk  Usually, milk is pasteurized before processing.

Milk cooling in a regular refrigerator is too slow. Milk coolers transfer temperature with a help of liquid and not air. Therefore, they cool milk 20 times faster. By stirring they ensure the same temperature of the whole milk and prevent warm milk in the middle.

By choosing the right cooling system you can lower your energy costs. Milk cooling is an important part of the total energy costs of operating a dairy. Energy demand and farm diary operating costs can be reduced using different options that involve heat recovery from your cooling system.
